St. Patrick’s Day Recipe for Irish Potatoes

St. Patty’s Day is a couple of days away. My favorite thing about St. Patty’s Day are Irish Potatoes (yummmmm)!!!

I have been making Irish Potatoes since I was in 8th grade, so for almost ten years and they are delicious. They are easy to make and fun to share and really fun to eat.

Here is my easy recipe which will yield about 24 pieces (double it because you won’t be able to stop eating them, and definitely double the recipe if you plan on sharing)…

Ingredients:

  • 2 tablespoons of butter (softened)
  • 1/4th of a package of cream cheese (1/3 Fat Philadelphia cream cheese works great too)
  • 1/2 teaspoon of vanilla extract
  • 2 cups of confectioners’ sugar
  • 1-1/4 cups of flaked sweetened (or non-sweetened) coconut [depending on how much sweet you can handle]
  • 1-1/2 teaspoons of ground cinnamon

Directions

  • In a bowl, beat the butter and cream cheese together until it is smooth
  • Add the vanilla
  • Gradually add the confectioners’ sugar and beat until smooth

Let the mixture cool in the refrigerator for about 10-15 minutes…

Prepare a cookie sheet…

  • Roll into balls
  • Roll in cinnamon
  • Place balls onto the cookie sheet and put in the refrigerator for ten minutes…

…and then ENJOY your homemade Irish Potatoes (and remember ‘sharing is caring’)…

IRRELEVANT LITTLE FACT / SIDE NOTE: These little guys are about 59 calories each, unless you use reduced-fat cream cheese, but HEY, St. Patty’s Day is only once a year so have fun!!! :)
